Baked Eggs

I had this easy and delicious meal at Sooke Harbour House last year. I thought there was some magic to it. It turns out it's very easy to pull off. If you can make a white sauce, you can have baked eggs.
Ingredients
6 eggs
2 cups milk
3 tablespoons butter
1 tablespoon flour
1/2 onion
1/2 cup white cheese
salt and white pepper
sprinkling with parsley is optional
wax paper or parchment

Yield: 3 eggy servings
Prep/Cooking: 10 minutes / 10 minutes

Cooking
In a sauce pan, melt butter. Finely dice onions and add them to the melted butter with salt and pepper. Pre-heat oven to
375°. When the onions are sufficiently fried, use a fork to extract the onions and set aside leaving as much butter in the pan as possible. Add the flour to the pan and absorb the butter until the butter flour mix begins to turn from yellow to light brown. Then add milk in small amounts constantly stirring until it forms a thick sauce. Stir in cheese and onions and scoop into small casserole dish. Crack six eggs into the sauce but do not mix them in-- let them rest atop the really hot sauce. Place buttered wax paper over the top of the casserole dish (it can just sit on top). Put into oven and bake for 6 to 10 minutes until the egg white set or the yolks firm up (peeking is allowed).

Serve by spooning out sauce and eggs together.
